Easy Cucumber Salad recipe is a family favorite that people have been enjoying for ages. A classic side dish that consists of thinly sliced cucumbers and onion combined with a sweet and tart vinaigrette.

I grew up eating creamy cucumber salad, which reminds me of meals at my grandmother Rosemary place.

This classic summertime dish, served with crisp cucumbers, fresh dill, and a simple sour cream dressing, is a welcome addition to any picnic, cookout, or party. You probably already have the ingredients for this simple dish, which you can quickly prepare.

One of the easiest summertime side dishes, and one of the nicest, in my opinion, is this cucumber salad recipe.

Fun fact – this vegetable salad will assist with digesting all those meaty dishes. This is due to the fact that vinegar, greens, and herbs encourage the body to produce its own natural enzymes and aid with digestion. Thus, there’s always a good excuse to prepare this salad for summer!

How to Make Creamy Cucumber Salad with Mayo?

This is a very easy meal that takes less than ten minutes to prepare. Just peel, toss, refrigerate, and consume.

Alright, perhaps a small amount extra, but not much. Let me demonstrate how to combine the dill, garlic powder, vinegar, maple syrup, and vegan mayo in a big bowl.

  • Add the dressing to the bowl and gently mix the cucumbers and onion until they are well covered.

A helpful tip is to refrigerate the cucumber salad for at least half an hour after covering the mixing bowl with plastic wrap. It facilitates the blending of all the flavors.

Substitutions

You can customize this salad to suit your taste preferences in a number of ways. Though that’s just me, I believe it to be ideal the way it is.

  • Cucumbers: If preferred, English cucumbers can be used in place of normal cucumbers.
  • Dressing: To prepare the cucumber salad dressing, use my tofu sour cream or cashew sour cream instead of vegan mayo. Another option is to use plain vegan Greek yogurt. I adore Kite Hill!
  • Onions: Use Vidalia or yellow onions in place of red onions if you don’t have any. They’re really good choices.

What’s in This Cucumber Salad?

We all love to hear this, so here it is: this salad has all the right components, none too complicated and affordable. Furthermore, because the majority of the ingredients in this salad are cucumbers, I would advise choosing the freshest ones possible—that is, ones with no brown spots or soft skin. Your cucumbers should be as firm and green as possible!

To prepare this recipe for cucumber salad, you’ll need:

  • Cucumbers, obviously! English cucumbers have thin, delicate skins and almost invisible seeds, which is why I like to use them in this recipe. Peeling is not necessary!
  • Red onion – For a bite of flavor.
  • White wine vinegar – It adds a delightfully tart flavor to the salad. Rice vinegar works as well too!
  • Honey – The sweetness of honey counteracts the sour vinegar. Feel free to substitute agave nectar if you’re vegan.
  • Salt – This gives the cucumbers a crisp, pickle-like feel by drawing moisture out of them. Additionally, it brings out the flavors in this salad!
  • Fresh dill and chives – Dill’s sour flavor complements the sweet and tangy vinegar dressing, making it a traditional addition to cucumber onion salads. Here, too, I adore using chives. They add a nice fresh finish to the salad and bring out the savory flavor of the onion.
  • Freshly ground black pepper: For a deeper, pepperier flavor, add a few twists.

How to Make Cucumber Salad

It’s really simple to prepare this fresh cucumber salad!

  • Cut the red onion and cucumber into thin slices first. I prefer to slice the vegetables with a mandoline because it produces consistent, paper-thin slices. In the event that you don’t have one, a sharp knife will do. Try your best to cut the onion and cucumbers into thin, uniform slices.
  • Then combine the vegetables with the salt, honey, and vinegar. Give them a good stir to ensure that the honey is distributed and they are coated evenly.
  • After that, allow the salad chill for a further 20 minutes. This is a crucial step that you should not omit! The cucumbers have an opportunity to absorb the taste of the dressing throughout the cooling period.

They will also expel a lot of water due to the salt. You will move the salad, discarding the water, to a different bowl or serving dish after the 20 minutes. Your cucumber salad will be less soggy if you do this.

Add the black pepper and fresh herbs as a finishing touch. After tasting, adjust the seasoning and serve!
