  • ½ medium red onion, peeled and roughly chopped

  • ½cup canola or other neutral oil
  • 2medium red onions, peeled, halved and thinly sliced
  • 4garlic cloves, thinly sliced
  • 1tablespoon tomato paste
  • 5fresh thyme sprigs
  • 1fresh bay leaf
  • 1teaspoon ground turmeric
  • ¼teaspoon smoked paprika (optional)
  • 3cups parboiled long-grain rice (such as Carolina Gold or Uncle Ben’s Original), basmati or jasmine rice (about 1¼ pounds)
  • Kosher salt and freshly ground black pepper
  • 2cups beef, chicken or vegetable stock

Step 1:

Prepare the Obe Ata: Blend all Obe Ata ingredients, excluding canola oil, in a blender until smooth. Work in batches if necessary. Use the liquid from the can of tomatoes, adding up to ¼ cup of water if needed to facilitate blending. Aim for approximately 3 cups of puree.

Step 2:

Heat 2 tablespoons of canola oil in a medium saucepan over medium-high heat. Pour in the puree and bring it to a simmer. Reduce the heat to medium, cover, and simmer until the sauce is reduced by about a third, taking roughly 18 to 20 minutes. This should yield around 2 cups. Obe Ata can be refrigerated for up to 2 weeks or frozen for up to 1 month.

Step 3:

Prepare the Rice: Preheat the oven to 350 degrees. In a large Dutch oven, heat ½ cup of canola oil over medium heat until shimmering (approximately 1 minute). Add onions and cook until softened, stirring frequently for 6 to 8 minutes. Set aside half of the onions on a plate. Sauté garlic until fragrant and translucent (about 2 minutes). Add tomato paste, turmeric, and smoked paprika (if using). Toast until turmeric is fragrant, and tomato paste turns to a dark red color (about 2 minutes).

Step 4:

Stir in the Obe Ata sauce, bringing it to a simmer over medium heat. Due to the dispersal of habanero oils, consider using a stovetop fan or opening a window while simmering. Mix in rice, thyme, and bay leaf. Season with salt and pepper. Add stock, cover with a lid, and transfer the pot to the oven. Cook until the rice is just tender, approximately 35 minutes.

Step 5:

Remove the pot from the oven and let it sit, covered (no peeking), for 15 minutes. Uncover, fluff the rice with a fork, and stir in the reserved sautéed onions. Adjust seasoning if necessary and remove thyme sprigs and bay leaf. Serve warm.
